Watch Barry Lewis of My Virgin Kitchen make these cheesy mashed potato balls step by step in the video below.
Mashed Potato Stuffed Balls with Cheese, Bacon and Chives
At a glance
- You’ll need: bacon, cheddar cheese, chives, egg, mashed potato, panko breadcrumbs, red chilli, sour cream and chive dip to serve, sunflower oil for frying
- Why it stands out: a block of cheddar hides in the middle of each ball, so you get a melted cheese center when you bite in.
Good to know
- Cold mash works best. Leftover mashed potato straight from the fridge is firm and easy to shape. Warm, runny mash won’t hold together.
- Chill before frying. A short rest in the fridge after coating helps the balls keep their shape in the oil.
- Frying safely. Lower the balls in gently, one at a time, and don’t crowd the pan. Drain them on kitchen paper.
- Swap the fillings. Ham, spring onions, jalapeños or a different cheese all work.
