Southern Smothered Chicken Recipe

This is Rosie’s recipe from I Heart Recipes.

What You’ll Need

All-purpose flour, celery seed, chicken (legs or thighs), chicken broth, garlic (minced and powdered), ground black pepper, onion, onion powder, poultry seasoning, salt, smoked paprika, vegetable oil and whole milk.

Serves: 4  |  Time: about an hour

Why It Stands Out

  • The gravy is made right in the pan the chicken browned in, so nothing is wasted and the flavor goes deep.
  • Dark meat (legs and thighs) stays juicy through a long, slow simmer, which breast meat often doesn’t.
  • Good to know: the seasoned flour does double duty, crusting the chicken and thickening the gravy.

Tips for Smothered Chicken

  • Pat the chicken dry before flouring it, so the coating sticks and browns.
  • Don’t crowd the pan. Crowded chicken steams instead of browning. Work in batches if you need to.
  • Scrape up the browned bits when the liquid goes in. That is where the gravy gets its flavor.
  • Check it’s done: chicken is safe at 165°F (74°C) in the thickest part. Thighs are even better a little higher.
  • Leftovers keep 3 to 4 days in the fridge. The gravy thickens when cold, so loosen it with a splash of broth when reheating.

Swaps and Substitutes

Want a richer gravy? Some cooks use cream instead of milk. If you don’t have any, see what to use instead of heavy cream or evaporated milk substitutes. Not sure which oil to fry in? Our guide to the top 10 cooking oils explains which ones handle high heat.
