Delicious, easy and cheap, this one skillet meal is a tasty dinner in about 30 minutes. Your family will love it so much, everyone will ask for seconds!
Southwest Skillet Chicken And Rice
At a glance
- Serves: 4 to 5
- Time: about 30 minutes
- You’ll need: chicken breasts, chicken stock, corn, green onions, green pepper, long grain rice, olive oil, onion, salsa, salt and pepper, shredded cheese
Good to know
- The salsa does the work. A jar of your favorite salsa seasons the whole dish, so pick one you like: mild for kids, hot if you like heat.
- Use long grain white rice. Brown rice or instant rice need different amounts of liquid and time.
- Keep the lid on. Lifting it lets out the steam the rice needs to cook through.
- Toppings. Sour cream, avocado, cilantro or a squeeze of lime finish it nicely.
- Leftovers. Keep covered in the fridge and eat within 3 to 4 days. It also makes a good burrito filling the next day.
