Avocado, Mozzarella And Tomato Grilled Cheese Sandwich

What it is

A grilled cheese with a fresh, summery filling: melting mozzarella, slices of ripe avocado and tomato, pressed between buttery toasted bread until the outside is golden and the cheese is soft and stretchy. It is a vegetarian lunch that feels a little more grown-up than plain cheese.

At a glance

  • Makes: one sandwich per two slices of bread, easy to scale up
  • Time: about 10 minutes
  • You’ll need: avocado, bread of your choice, butter, mozzarella slices, olive oil, salt, tomato

Tips for the best avocado grilled cheese

  • Choose a ripe but firm avocado. It should give slightly when pressed. Very soft avocado turns to mush in the heat.
  • Pat the tomato slices dry. Tomato juice is the main reason a grilled cheese goes soggy, so a quick blot with a paper towel helps a lot.
  • Low and slow. Medium-low heat gives the mozzarella time to melt before the bread burns.
  • Cheese on both sides. Putting a little cheese against each slice of bread, with the avocado and tomato in the middle, glues the sandwich together so it doesn’t slide apart.
  • Pick a sturdy bread. Sourdough or a thick country loaf holds the juicy filling better than soft sandwich bread.
  • Add-ins: crispy bacon, a few basil leaves, a drizzle of balsamic glaze or a pinch of chili flakes all work well.

What to serve with it

A bowl of tomato soup is the classic partner. A green salad or a handful of chips makes it a quick lunch.
