Tips
- Pat the tomato slices dry with a paper towel. Wet tomato is what makes a grilled cheese soggy.
- Cook it low and slow. Medium-low heat gives the cheese time to melt before the bread burns.
- No provolone? Mozzarella, cheddar or Swiss all melt well. A mix of two is even better.
- Ripe, in-season tomatoes make the biggest difference here. Out of season, Roma or cherry tomatoes usually have more flavor than big supermarket slicers.
- For kids, cut it into strips for dipping, and serve with a bowl of tomato soup.
