This air fryer blueberry cake is one of the recipes from our YouTube channel, and it is the easiest way we know to get a whole cake out of an air fryer. Three eggs, a splash of milk, half a pack of cake mix and a little oil are beaten into a thick, pale batter, poured into a round foil pan and dotted with fresh blueberries. 35 minutes later you lift out a tall, golden cake with the berries sitting on top like polka dots.
The secret is the beating. The eggs, milk and cake mix are whisked with an electric mixer until the batter turns milky white and thick, so it falls off the whisk in ribbons. That air is what makes the cake so soft. The oil goes in last, stirred in gently, and the batter goes straight into the pan.
The heat is low on purpose: 140 degrees Celsius, which is about 285°F. An air fryer blows hot air right onto the top of the cake, so a low temperature gives the middle time to bake before the top gets too dark. In our video the cake comes out evenly golden, cracked a little across the top, and fluffy all the way through.
We made it as an after-school cake for the kids, and it works the same as a quick breakfast cake or a snack with coffee. If you liked our air fryer cupcakes with cake mix, this is the one-pan version, with blueberries instead of almonds.
What you need
- Eggs, 3 large.
- Milk, 60 ml (about 1/4 cup).
- Cake mix, half a pack. Any plain sponge or vanilla cake mix.
- Cooking oil, 10 grams (about 2 teaspoons).
- Blueberries, a handful, for the top.
- A round foil pan that fits your air fryer basket, and an electric mixer.
Our video doesn’t say how big the pack of cake mix is or how many blueberries go on top. In the footage a single layer of berries is spread over the whole cake.

Notes
Tips
- Beat it well. Keep going until the batter is pale and thick. A thin batter makes a flat, dense cake.
- Stir the oil in gently. Just until it disappears, so you keep the air you beat in.
- Use a pan that fits. Leave a little space around the foil pan so the hot air can move.
- Berries on top, not mixed in. Dotting them on the surface, as in our video, gives the polka-dot look and they sink in just a little.
- Keep the heat low. 140°C lets the middle bake before the top browns too much.
Questions people ask
Can you bake a cake in an air fryer?
Yes. An air fryer works like a small fan oven. Bake the cake in a round foil pan at a low temperature, like the 140°C for 35 minutes used here, so the inside cooks through before the top browns.
Is the 140 degrees Celsius or Fahrenheit?
Celsius. Our video says 140 degrees, and 140°F is far too low to bake a cake. That is about 285°F.
Can I use frozen blueberries?
Our video uses fresh blueberries, so that is what we can show you. Frozen berries let out more juice as they thaw, so if you try them, put them on straight from the freezer.
