These sweet potato cubes are coated with garlic, butter, oil, Parmesan cheese and Italian seasoning, then baked in the oven. They make a simple savory side dish, and a nice change from the usual sweet, marshmallow-topped sweet potatoes.

Why it works as a holiday side
Most Thanksgiving tables already have something sweet on them. Garlic and Parmesan sweet potatoes give you the same fall vegetable in a savory version, so they sit nicely next to turkey, ham or roast chicken. They’re an oven side, so they fit in around the main dish.
Tips
- Cut the cubes the same size, so they cook evenly and you don’t end up with some burnt and some hard.
- Give them room. Spread the cubes out in one layer so they roast instead of steam.
- Garlic salt is already salty. Taste before adding any extra salt, because Parmesan is salty too.
- Leftovers keep 3 to 4 days in the fridge. Reheat them in the oven or air fryer to bring back the crisp edges.
