Why it’s worth making

It feeds a crowd from one dish, it’s meatless as written, and the hot sauce gives it more personality than the usual egg-and-cheese bake. It’s a good one for a holiday morning or a brunch when you don’t want to stand at the stove.

Tips before you start

  • Keep it from going watery. Thawed hash browns, mushrooms and spinach all carry water. Squeeze the potatoes dry in a clean towel and cook the vegetables down before they go into the dish.
  • Make it the night before. Assemble it, cover it and keep it in the fridge, then bake in the morning. Give it a little extra oven time if it goes in cold.
  • How to tell it’s done. The middle should be set and not wobbly, and a knife pushed into the center should come out clean. Egg dishes are safe at 160°F (71°C).
  • No half and half? Milk works, as the recipe says. For other swaps see our heavy cream substitute chart.
  • Want meat in it? Cook sausage or bacon first and drain it well, then scatter it in with the vegetables.
  • Storage. Leftovers keep 3 to 4 days in the fridge. Cut it into squares and reheat them one at a time for quick weekday breakfasts.
