One pan spaghetti and meatballs by Mardi Michels (Eat. Live. Travel. Write.). Mardi uses ground pork instead of beef and cooks half-length spaghetti in passata and diced tomatoes, so the strands fit flat in the pan and cook evenly. It is a good pick if you find beef meatballs heavy.

  • Serves: 6, according to her recipe card
  • Time: about 35 minutes
  • You’ll need: basil, diced tomatoes, egg, garlic, ground pork, oil, oregano, panko breadcrumbs, Parmesan, passata, salt and pepper, spaghetti, water

Tips for one-pot pasta

  • Use a wide, deep pan. The spaghetti needs to lie under the liquid; break it in half if your pan is too small.
  • Stir often in the first few minutes. Dry spaghetti sticks together as soon as it softens unless you keep it moving.
  • Handle the meatballs gently. Mixing and squeezing the meat too much makes them tough. Chill them for a few minutes before browning and they hold their shape better.
  • Do not drown it. The liquid should be mostly absorbed by the time the pasta is tender. If it is still soupy, simmer uncovered for a minute or two; if it is dry before the pasta is done, add a splash of hot water.
  • Finish with Parmesan off the heat so it melts into the sauce rather than clumping.
  • Leftovers keep for 3 days in the fridge. Add a little water when reheating, because the pasta keeps soaking up the sauce.
