Good to Know

  • Which potatoes? Waxy or all-purpose potatoes (like Yukon Gold) hold their slices better than floury baking potatoes.
  • Cheese that melts: mild sandwich cheeses such as Swiss, provolone or Havarti melt evenly. Aged hard cheeses tend to go oily.
  • Let it rest. A few minutes off the heat lets the cheese set, so the slices hold together when you cut it.
  • Swap the ham: cooked bacon, turkey slices or sautéed spinach all work for a different filling.
  • Leftovers: keep it covered in the fridge for up to 3 days. It’s good cold, Spanish-style, or warmed gently.
