Tips for Crispy Potato Balls

  • Got leftover mashed potatoes? They are a great head start, as long as they are fairly stiff. Very creamy mash is hard to shape.
  • Cold shapes better. A chilled potato mixture holds its shape and is less likely to split in the hot oil.
  • Fry in small batches. Crowding the pan cools the oil and makes the balls greasy instead of crisp.
  • Safety with kids around: let the grown-up handle the frying, and let the kids roll the balls and dip them in the crumbs.
  • Dips they’ll like: ketchup, ranch, or a little garlic mayo.
