A second way to make chicken breast in the air fryer, and a favourite at home because the marinade uses things most kitchens already have: soy sauce, oyster sauce, pepper and an egg yolk. Half an hour in the marinade, 16 minutes in the air fryer, and the pieces come out golden and tender.

Ingredients
  

  • chicken breast cut into pieces
  • 1 spoon soy sauce
  • 1 spoon cooking wine
  • 1 spoon oyster sauce
  • 1 pinch salt
  • 1/2 spoon pepper
  • 1 egg yolk
  • chopped celery to serve

Method
 

  1. Cut the chicken breast into pieces.
  2. Add one spoon of soy sauce, one spoon of cooking wine and one spoon of oyster sauce.
  3. Add a pinch of salt, half a spoon of pepper and one egg yolk.
  4. Mix evenly and marinate for 30 minutes.
  5. Put the pieces in the air fryer.
  6. Air fry at 180°C (356°F) for 16 minutes, turning them over three times during cooking.
  7. Sprinkle with chopped celery when serving.

Notes

The video measures with an ordinary spoon rather than a measuring spoon. A tablespoon is a fair stand-in.
Turning the pieces three times is what gives them colour on every side.

Tips

  • Cut the chicken into flat, even pieces. They cook through in 16 minutes and brown well.
  • Don’t skip the 30 minutes. That’s when the marinade seasons the meat.
  • Turn them three times. Set a timer every four or five minutes.

Serve it with

Rice and a quick salad, noodles, or tucked into a wrap with crunchy vegetables. They’re also good cold in a lunch box.

What does the egg yolk do in the marinade?

It coats the chicken and helps it brown and stay juicy, a little like a light batter.

Can I use chicken thighs?

Yes. Thighs stay even juicier. Check the biggest piece is cooked through before serving.
