Melt-In-Your-Mouth Pumpkin Cookies
This is Crissy Page’s recipe from Dear Crissy: soft, cakey pumpkin cookies with a brown sugar frosting on top.
What You’ll Need
- For the cookies: all-purpose flour, baking powder, baking soda, butter, canned pumpkin, cinnamon, eggs, granulated sugar, nutmeg, salt and vanilla
- For the frosting: brown sugar, butter, milk, powdered sugar, vanilla, and a sprinkle of cinnamon if you like
Makes: a big batch, about 5 dozen | Time: about 40 minutes, plus cooling before frosting
Why It Stands Out
- It makes a lot of cookies, which is handy for a bake sale, a cookie swap or a Thanksgiving dessert table.
- The brown sugar frosting tastes almost like caramel, and it is what people remember.
- Good to know: these are soft and cake-like, not chewy or crisp. If you want a chewy cookie, this isn’t the one.
Tips for Pumpkin Cookies
- Use plain canned pumpkin, not pumpkin pie filling, which is already sweetened and spiced.
- Measure the flour lightly. Spoon it into the cup and level it off. Packed flour makes heavy, dry cookies. Our guide how many teaspoons in a cup helps when you scale a recipe.
- Let them cool completely before frosting, or the frosting slides off.
- Storage: frosted cookies keep 3 to 4 days in a sealed container in a single layer. Unfrosted cookies freeze well.
Missing an Ingredient?
Out of eggs? Here is what to use instead of eggs in baking. For the frosting, any milk works. If the cupboard is bare, evaporated milk thinned with a little water is a good stand-in.
