Greek Yogurt Whole Grain Chicken Alfredo

Ingredients
12 oz. whole grain noodles
2 tbsp. extra virgin olive oil
2 boneless, skinless chicken breasts
Kosher salt
Freshly ground black pepper
2 tbsp. unsalted butter
2 cloves garlic, (mince them)
2 tbsp. flour
3/4 c. whole or 2% milk
2/3 c. Parmesan cheese (grate it)
1/2 c. Greek yogurt
1 tbsp. parsley, (chop it)
Recipe
Cook the whole grain noodles and drain them. Then heat olive oil in a skillet and add chicken into it. It will take 8 minutes to cook each side till it leaves its pink colour. Use salt and pepper for seasoning. After cooking, take it out of the skillet, let chicken to cool and then chop it into bite-size pieces.
Now for more cooking, wipe the skillet and melt butter on low to medium heat. Cook garlic for 2 minutes in it till it gives off fragrance. Add flour to it and cook it for 2 more minutes while stirring constantly.
Now pour milk into the skillet while whisking it thoroughly and then let it simmer. Then while whisking add parmesan and when it feels smooth, turn off the flame and whisk Greek yogurt in it.
For the final step, add noodles and chicken into it. Use salt and pepper again for seasoning and in the last, garnish with parsley to get it ready for serving.
Note: It can be served to 6-8 persons and total cooking time is 55 minutes.
