Healthy Burritos
Healthy Mexican Recipes will change your perspective on these super greasy, calorie loaded monsters in a wrap.
Ingredients To Gather
Olive oil, 1 tablespoon.
Yellow onion, 1 small diced.
Minced garlic, ½ tablespoon.
Red and green bell pepper, diced and ½ cup each.
15 oz. organic black beans, 1 can drained and rinsed.
Sweet corn, ½ can drained and rinsed.
Chili powder, 1 ½ teaspoons.
Cumin, 1 teaspoon ground.
Cilantro, ¼ cup chopped.
Lime juice, ½ wedge.
Salt to taste.
Black pepper to taste.
Quinoa.
Cheddar cheese, 2 cups shredded.
Burrito sized flour tortillas, 8-10.
Directions To Follow:
Heat olive oil in a large pan and fry onions in it until tender. Add the minced garlic and sauté for almost 2 minutes. Then add red and green bell peppers, chili powder, corn, black beans, cumin and cilantro. Cook for 4-5 minutes then add lime juice and season with salt and black pepper.
For assembling, on a tortilla place a few spoons of quinoa and add shredded cheese on top. Now place the bean and corn mixture in the center and roll the burritos.
Heat a large pan and place the folded burritos on it to turn them toasty and crispy on both sides.
Serve with a yogurt dip and enjoy.
