This is a great recipe plus is always so much fun to try a new way of cooking potatoes.
The texture this fabulous fondant potato technique provides is unlike anything you get by just roasting!
You\'ll never think about potatoes in a same way again after trying this.
The texture it provides for russet is unlike anything else, so dense and rich with just enough crunch from its edges that contrast beautifully against the uniquely creamy inside.
Ingredients for 6 fondant potatoes:
- 2 tbsp vegetable oil
- 3 large russet potatoes (other varieties will not work as well)
- salt and pepper to taste
- a knob of butter (a 2 or 3 tablespoon size chunk)
- 4 thyme sprigs
- 1/2 cup chicken broth or stock, more if needed
