Why pork chops dry out, and how to stop it

  • Buy thicker chops. A chop about an inch thick has room to brown outside before the middle overcooks. Thin chops go from juicy to dry in a minute.
  • Pat them dry and season ahead. A dry surface browns instead of steaming. Salting 30 minutes or more ahead (or a short brine) helps the meat hold on to its juices.
  • Don’t cook by the clock alone. The USDA’s safe internal temperature for pork chops is 145°F, followed by a 3-minute rest. An instant-read thermometer takes the guesswork out, and pork at 145°F can still look slightly pink in the middle.
  • Let them rest for a few minutes on a plate before cutting, so the juices settle back into the meat instead of running onto the board.
  • Leftovers: keep covered in the fridge for 3 to 4 days. Slice thin and warm gently with a splash of broth, or use cold in sandwiches.

Why it stands out: the chops get a quick brown-sugar and rosemary brine, then a smoked-paprika spice rub before a hard sear and a short finish in the oven. It is a good one if you like a darker, spiced crust. The featured photo at the top of this page is this recipe.

  • Time: about 45 minutes, including the brine
  • You’ll need: bay leaf, black peppercorns, boneless pork chops, brown sugar, chili powder, cumin, dried rosemary, garlic powder, kosher salt, olive oil, onion powder, smoked paprika, sweet paprika, water

If my fried pork chops or cube steak are not tender enough, I put them in a covered dish and put em in a 300 degree oven for around 45 min. to tenderize them.
