Ingredients

  • 3 large eggs
  • ¾ cup vegetable oil
  • ½ cup orange juice
  • 2 ½ teaspoons vanilla extract
  • 5 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 1/3 cups margarine, room temperature
  • 6 tablespoons water
  • Traditional filling of your choice (e.g. poppy seed, apricot, chocolate)

Directions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the eggs, oil, orange juice, and vanilla extract until combined.
  3. Add in the flour and sugar and mix with an electric mixer until a dough forms. If needed add more flour to make it easier to work with.
  4. Divide the dough into 4 equal parts and roll each part out on a lightly floured surface until it\'s about ⅛ inch thick. Cut circles using a 3-inch cookie cutter or drinking glass and place them on the prepared baking sheets.
  5. Place about 1 teaspoon of your chosen filling in the center of each circle then fold up the sides to form triangles (see photo). Pinch together at the top to seal in the filling and place back on the baking sheet. Repeat with remaining dough and filling until all cookies are formed.
  6. Bake for 12 minutes or until golden brown around the edges then transfers to a cooling wire rack to cool completely before serving or storing in an airtight container for up to 3 days. Enjoy!
