At a glance

  • You’ll need: butter, graham crackers, pecan halves, white sugar
  • Time: about 20 minutes, plus cooling
  • Makes: one baking sheet, which breaks into plenty of pieces for a crowd or for gift bags

Why it stands out

It tastes like the gooey, nutty top of a pecan pie, but there is no crust to roll, no filling to set and no slicing. Everything happens on one sheet pan, and the graham crackers give it a crunchy base that a real pie never has. With only four ingredients, it is also one of the cheapest holiday treats you can make in bulk.

Good to know

  • It is very sweet and very rich. Small pieces go further than you think, which makes it ideal for a dessert table next to the pies.
  • Let it cool completely before you break it. Warm, the topping is soft and the pieces bend. Cold, it snaps cleanly.
  • Use a rimmed baking sheet. The hot topping is runny, and a flat tray lets it slide off the edge.
  • Other nuts work. Walnuts or chopped almonds are the easy swaps if pecans are expensive where you live.

Storing and gifting

Keep the bark in an airtight container with baking paper between the layers so the pieces do not stick together. It is a lovely edible gift: a handful of pieces in a cellophane bag or a small tin, tied with ribbon, travels well for teachers, neighbours and the office. Make it a day or two before a holiday meal and it is one less thing to do on the day.
