How a no-bake jello cheesecake sets
There is no oven and no eggs, so the filling needs something else to hold it together. Here that job is done by gelatin: once the gelatin is dissolved and mixed into the cream cheese filling, the cake firms up in the fridge, and the jelly layer on top sets the same way. That is also why the hands-on part is quick, but the cake still needs several hours (ideally overnight) in the fridge before you slice it.Two more no-bake jello cheesecakes worth trying
1. Strawberry Jelly Cheesecake by Gail Ng (Teak & Thyme). This is the photo at the top of this page. A small 6-inch cake with a clear strawberry jelly layer on top, made with plain gelatin and cranberry juice rather than a packet of Jell-O, and Greek yogurt in the filling to keep it light and tangy. Lovely if you want something that looks special.- Makes: one 6-inch cake
- Time: about 13 hours, almost all of it chilling, so make it the day before
- You’ll need: brown sugar, cranberry juice, cream cheese, gelatin powder, Greek yogurt, heavy whipping cream, honey graham crackers, powdered sugar, strawberries, unsalted butter, vanilla extract, water

- Serves: 9, according to his recipe card
- Time: about 15 minutes of work, plus time in the fridge to set
- You’ll need: boiling water, butter, Cool Whip, cream cheese, graham cracker crumbs, lemon Jell-O, lemon juice, powdered sugar
Tips
- Soften the cream cheese first. Cold cream cheese leaves lumps that no amount of beating will remove once the gelatin goes in.
- Let dissolved gelatin cool a little before mixing it in, but do not let it set. Too hot and it can thin the filling; too cold and it forms rubbery strings.
- Cool the jelly layer before pouring it on, and pour it over the back of a spoon so it does not dig into the filling.
- Use a springform or loose-bottomed tin, or line the pan with baking paper, so you can lift it out cleanly.
- Slice with a hot knife, dipped in hot water and wiped between cuts, for neat edges.
- Storage: covered in the fridge for 3 to 4 days. It does not freeze well once it has a jelly layer.
