This is pretty much a basic slow cooker recipe but it’s so tasty, ultimate comfort food. The flavors combine perfectly and make a wonderful meal which, granted, is not gourmet, but it was created with kids in mind. Adults like it too and it’s great served with a side salad or some steamed broccoli.

Why it is worth making
- Six ingredients, all cheap. Potatoes, ground beef and a couple of cans of soup feed a family for very little.
- No oven. It is exactly what the title promises: a casserole that keeps the kitchen cool.
- Easy to tweak. It is a plain base, so it takes well to onion, garlic, a bag of frozen vegetables or a different cheese.
Another version worth trying
Crockpot Hamburger Potato Casserole by Kelsey Smith (By Kelsey Smith). This is the photo at the top of this page. Kelsey’s version adds onion, garlic powder and a mix of cheddar and Monterey Jack to the same beef, potato and mushroom soup base, which gives it a bit more flavour than the plain original.
- Serves: 10, according to her recipe card
- Time: about 6 hours, mostly hands-off in the slow cooker
- You’ll need: black pepper, cheddar, cream of mushroom soup, garlic powder, ground beef, kosher salt, milk, Monterey Jack, russet potatoes, yellow onion

Tips
- Brown and drain the beef first. It tastes better and the sauce will not be greasy.
- Slice the potatoes thinly and evenly. Thick or uneven slices are the usual reason a slow cooker potato casserole is still hard in the middle.
- Layer, do not stir. Alternating potatoes, beef and sauce lets the potatoes cook through in the soup.
- Cheese goes on at the end. Add it for the last stretch with the lid on so it melts without turning oily.
- Leftovers keep for 3 to 4 days in the fridge; a splash of milk loosens the sauce when you reheat it.
