Sweet And Spicy Mexican Street Corn Salad Recipe

Ingredients:

  • Frozen Corn: 2 bags (each of around 400g or 14oz.)
  • Olive Oil: 1table spoon
  • Mayonnaise: ¼ cups
  • Cotija Cheese: Crumbled (around 225g or 8oz)
  • Diced Jalapeno: half (make sure you remove the seeds)
  • Cilantro: half cup (It should be properly Chopped)
  • Cayenne Pepper
  • Minced Garlic: 3 cloves
  • Lime: 1 (juice)
  • Sea Salt: as per need
  • Smoked Paprika: as per need
  • Chili Powder: as per need

Directions:

  1. Take a fry pan and heat it on medium flame, adding olive oil in it.
  2. Now cook the corns in oil for around 10-12 minutes, make sure to mix it every once in a while.
  3. Once the corns are toasted properly, keep them aside.
  4. After that, take a fairly sized bowl; add the following ingredients in it: Mayo, cojita cheese, cilantro, jalapeno, minced garlic and cayenne pepper. Make sure to mix them well until you feel that they are all even.
  5. Now take the lime and squeeze it properly into the bowl. Stir it well so that the whole mixture gets blended with the lime.
  6. Here comes the main part: add the corns to the mixture and mix it well. You should make sure that the mixture and corn are evenly stirred as having one thing excessively will not give the desired taste.
  7. Now put the salad in the refrigerator and wait for it to get chilled.
  8. After that comes the seasoning part; put the salad in an aesthetic bowl and spread the smoked paprika, chilli powder, and sea salt on the top of it.
  9. Your Mexican Street Salad is ready to be served!

For Nachos:

  • Large sweet potatoes, 2-3.
  • Olive Oil, 1 tablespoon.
  • Cumin, 1 teaspoon.
  • Chili powder, 1 teaspoon.
  • 14-Ounce refried black beans, 1 can.
  • Sweet corn, 1 cup.
  • Multigrain tortilla chips, 3 oz.
  • Chopped cilantro and crumbled cotija cheese for topping.

For Cheese Sauce:

  • Butter, ½ teaspoon.
  • Minced garlic, ½ teaspoon.
  • Milk, 1 ½ cups.
  • Flour, 2 tablespoon.
  • Salt to taste.
  • Shredded cheese of choice, ½ cup.

Directions To Follow:

  • Let the grill preheat on a medium heat. In the meantime, wash, pierce with a fork and then wrap sweet potatoes in a paper towel. Microwave them for almost 4-5 minutes, cool and slice them into wedges. Toss them with olive oil, cumin, chili powder, salt to taste and grill them on each side until they are roasted.
  • In a saucepan, melt the butter and add the garlic to it. Sauté it for 1-2 minutes and add half of the milk to the pan. Let it simmer for a bit, mix the flour in the remaining milk and add it to the saucepan too. Stir until it is smooth and thick then take it off the heat. Whisk in the cheese and salt until it melts.
  • For the assembly, heat the refried beans in a pan or microwave them and dry roast the sweet corn until golden brown. In a dish layer the tortilla chips, top them with the sweet potato wedges, the beans and the roasted sweet corn. Finally drizzle the cheese sauce over it and top it with cotija cheese and cilantro.
