- Crack the eggs into the dish. You do not need to beat them.

- 1 tbsp scallion ginger water (see note below)
- 1 large egg
- 1 tbsp cornstarch
- 1/2 tsp black pepper
For the Scallion Sauce
- 2–3 scallions (green onions), finely chopped
- 3 cloves garlic, minced
- 1 tsp sesame oil
- 1 tsp sesame seeds
- Pinch of salt
For Cooking
- Cooking oil spray
Instructions
- Marinate the Pork
- Gently pound the pork steaks with the back of a knife or a meat mallet to make them more tender.
- In a bowl, mix soy sauce, scallion ginger water, egg, cornstarch, and black pepper.
- Add the pork steaks and coat them well.
- Let them sit and marinate for at least 30 minutes.
- Make the Scallion Sauce
- In a small bowl, mix the chopped scallions, minced garlic, sesame oil, sesame seeds, and a pinch of salt.
- Set the sauce aside.
- Cook the Pork
- Preheat your oven or air fryer to 350°F (180°C).
- Place the marinated pork steaks on a rack or tray.
- Bake for 10 minutes.

Note – How to Make Scallion Ginger Water:
Smash a few pieces of scallion and a slice of ginger with the side of a knife. Put them in 2–3 tablespoons of warm water and let them sit for about 10 minutes. Strain and use the flavored water.
“Secret Method” Baked Sweet Potatoes
These sweet potatoes have a crispy outside and a soft, creamy inside. The quick water bath is the fun “secret” step.
Cook Time: About 40 minutes
Extra Time: About 2 minutes soaking

- 2 large sweet potatoes
- A bowl of cold water (for soaking)
Instructions
- Preheat your air fryer (or oven) to 350°F (180°C).
- Wash and scrub the sweet potatoes well. Cut them into large, even chunks.
- Place the chunks in the air fryer basket and bake for 20 minutes.
- Carefully take the hot sweet potato chunks out and put them straight into a bowl of cold water for exactly 2 minutes. This helps the skin get extra crispy.
- Drain the sweet potatoes and pat them dry with a clean towel.
- Put them back into the air fryer basket. Bake again at 350°F (180°C) for about 20 more minutes, until the outside is browned and the inside is soft and creamy.

- 1 scallion, chopped
- 1 tsp cornstarch
- 1 tsp cooking oil
For the Wraps
- 2–3 frozen scallion pancake wraps (or “handmade flour tortillas”), thawed
- 2–3 slices cheese (American, cheddar, or mozzarella)
- 1 egg, beaten (for egg wash)

- Make the Filling
- In a bowl, add the ground beef, salt, soy sauce, white pepper, chili powder (if using), scallion ginger water, chopped scallion, cornstarch, and oil.
- Mix everything very well in one direction until it feels sticky and smooth.
- Assemble the Wraps
- Lay one thawed scallion pancake wrap flat on a board.
- Spread a line of the beef mixture down the center.
- Place a slice of cheese on top of the beef.
